What is Shiitake?Shiitake (Lentinus edodes) is the second most cultivated edible mushroom worldwide, with production reaching about 2 million tons. Its Japanese name is derived from the tree it grows on, a species of chestnut called Shii (Castanopsis cuspidate), and the mushroom (Take). Shiitake, also known as "forest meat", is a club mushroom belonging to the Marasmiaceae family of the Agaricales order. Its fruiting body has a beige and brown cap, is very soft to the touch and can reach up to 25 cm. It grows on decaying matter, especially on chestnut and oak wood, but also on eucalyptus, beech or holly oak in mountainous, warm and humid areas.
